For 3 Samosas:
- 3 sheets of filo pastry
- 1 small goat’s cheese
- 20 g fresh spinach
- 3 tsp honey
- 1 tbsp sesame seeds
- 3 mint leaves
- Olive oil
- Pepper
Cherry tomato and mozzarella quiche (serves 2)
- 3 eggs
- 20 cl liquid cream
- 50 g grated Emmental or Parmesan cheese
- 1/2 red onion
- 50 g bacon strips
- 1 drizzle of olive oil
- 1 tsp herbs of Provence or rosemary
- 1 roll of puff pastry
- 6 cherry tomatoes
- 100 g mozzarella

Samosas:
Prep: 15 minutes
Cook: 5 minutes
- Fold the filo sheets in half and then in half again to obtain a strip.
- Cut 3 slices of goat’s cheese.
- Place each slice of cheese at the end of each strip of filo pastry.
- Season with honey and pepper.
- Place a few spinach leaves and mint.
- Fold the filo pastry strips several times to enclose the ingredients and form a triangle.
- Brush the samosas with olive oil and sprinkle with sesame seeds.
- Bake the samosas in a hot oven for 5 minutes or in a pan for 2 minutes on each side.
Place them in your Qwetch Lunch Box.
Cherry tomato and mozzarella quiche:
Prep: 15 minutes
Cook: 40 minutes
- Preheat the oven to 210°C (th.7).
- In a bowl, whisk the eggs, add salt and pepper.
- Pour in the liquid cream and Parmesan cheese and mix.
- Chop the half onion and fry it for 3 minutes in a pan with hot oil and the herbs of Provence.
- Add the chopped bacon and mix.
- Cook for another 1 minute then pour this mixture into the cream and mix.
- Chop the mozzarella into small pieces and add them to the mixture.
- Line a pie tray with puff pastry and add the mix.
- Add the halved cherry tomatoes on top.
- Cook for 35 to 40 minutes.
- Leave to cool down in the fridge.
- Place your quiche in your stainless steel container Qwetch Lunch Box.

Samosas:
Make extra samosas and freeze them. Make samosas with different flavours. Use for example leftover tagine, stew, chicken and transform these leftovers into delicious samosas.
Cherry tomato and mozzarella quiche:
Freeze the leftover quiche or keep it in the fridge for up to 4 days. When it’s not tomato season, replace them with pickled tomatoes or peppers.
